Strawberry Sheet Cake with Lemon Cream Cheese Frosting

for cake
1/2 cup (1 stick) unsalted butter, room temperature
1 cup white sugar
1 egg
1 teaspoon lemon juice
1/2 teaspoon vanilla
1 1/4 cups cake flour
3/4 tablespoon strawberry jello powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 cup milk
2/3 cups strawberries, chopped

for frosting
8oz cream cheese, room temperature
2/3 cups sugar
2/3 cups strawberries, chopped
1 1/2 cups heavy cream
3 tablespoons lemon juice

1.) Preheat oven 350 degrees.
2.) Beat butter until creamy in large bowl.
3.) Add in sugar and beat until fluffy.
4.) Mix in egg, vanilla, and lemon juice.
5.) Mix cake flour, jello powder, baking soda, and salt in medium bowl.
6.) Fold in flour mixture into wet mixture, alternating with milk until fully combined.
7.) Mix in strawberries.
8.) Grease a 9x13in baking pan and pour in batter. Bake for 20-25 minutes.
9.) Let cake cool completely.
10.) For frosting: beat cream cheese in a medium bowl and mix in 1/3 cup sugar and lemon juice. In another bowl, whisk heavy cream together, add the remaining 1/3 cup sugar and continue mixing until fluffy. Fold in whipped cream mixture into cream cheese mixture. Stir in strawberries.
11.) Spread frosting over completely cooled cake and store in the fridge.
