Mini Banana Cheesecakes

1/2 cup instant oats
4 tablespoons unsweetened applesauce
8oz cream cheese
1 1/2 mashed bananas
2 or 3 tablespoons honey
3/4 teaspoon cornstarch
1/2 teaspoon vanilla extract

1.) Preheat oven 300 degrees.
2.) Combine oats and applesauce. Press into 6 greased cups of a cupcake tin.
3.) Bake crust for 8 minutes.
4.) Cream together cream cheese, bananas, and honey.
5.) Mix in cornstarch and vanilla.
6.) Fill cooled crust cups to top with cheesecake filling.
7.) Bake for 12 minutes. Let cool, then refrigerate for 3 hours.
