Onion Rings

1-2 yellow onions
1/2 cup flour
1/4 cup cornstarch
2 tablespoons instant mashed potatoes
1/2 teaspoon of cayenne pepper
1 cup cold club soda
panko bread crumbs
vegetable oil

1.) combine flour, cornstarch, instant mashed potatoes, and cayenne pepper in bowl.
2.) add club soda to dry mix and let batter sit for a few minutes.
3.) pour some bread crumbs into shallow dish.
4.) cut 1-2 yellow onions into rings.
5.) heat shallow saucepan with vegetable oil until about 350 degrees (not very hot).
6.) dip raw onion rings in batter and then coat in bread crumbs. place in saucepan and let fry until golden brown.
7.) coat finished onion rings with salt and serve.
