Gluten Free PB & Chocolate Oatmeal Cookies

1 cup peanut butter
2/3 cup packed dark brown sugar
1 1/2 teaspoons vanilla
2 eggs
2/3 cup Bob’s Red Mill gluten-free rolled oats
1 teaspoon baking soda
2/3 cup chocolate chips

1.) Preheat oven 350 degrees.
2.) Combine baking soda and oats in small bowl.
3.) Beat peanut butter, dark brown sugar, vanilla, and eggs in large bowl.
4.) Add baking soda and oat mixture to large bowl. Mix with wooden spoon.
5.) Fold in chocolate chips.
6.) Scoop spoonfuls onto cookie sheet, molding into balls with flat top.
7.) Bake for 9 minutes, let cool, then serve.
