Gluten-free Cheddar Broccoli Soup

Ingredients:
1/4 cup butter
1/2 medium chopped onion
1/4 cup rice flour
2 1/2 cups half-and-half
4 cups water + 4 chicken bouillon cubes
2 cups broccoli florets
1 cup grated carrot
1/4 teaspoon nutmeg
2 cups grated cheddar cheese
salt + pepper

Steps:
1.) Saute onion, then add to large pot with 1/4 cup butter.
2.) Mix onion and butter until melted.
3.) Mix in flour.
4.) Mix in 4 cups water + 4 chicken bouillon cubes, and half-and-half.
5.) Let simmer for 20 minutes.
6.) Mix in broccoli, grated carrot, nutmeg, salt, and pepper.
7.) Let simmer for 30 minutes.
8.) Remove from heat and pulse in blender until smooth. Pour back into pot.
9.) Add cheddar cheese and let simmer for 10 minutes.
10.) Serve & enjoy.
