1 teaspoon vanilla
2 cups whole milk
4 egg yolks
1 cup sugar
2 cups of avocado (roughly two avocados)
1 cup heavy whipping cream
1.) Pour vanilla and milk into saucepan. Mix.
2.) Bring ingredients to a simmer, then turn off heat.
3.) Pour mixture into a separate container and place in fridge for 15 minutes.
4.) Pour the refrigerated mixture back into saucepan after the 15 minutes is up.
5.) Whisk in 4 egg yolks and sugar.
6.) Bring mixture back to simmer and keep whisking until it becomes thick like custard.
7.) Turn off heat and pour mixture into a container and place in fridge again for 15 minutes.
8.) While mixture is cooling off in fridge, measure out 2 cups of avocado and place in blender.
9.) Squeeze out all of the lemon juice from your lemon, into the blender as well.
10.) Finally, add the whipping cream into the blender, then blend your ingredients.
11.) Add the cooled off mixture from the fridge into the blender.
12.) Blend everything together until a smooth consistency forms.
13.) Follow your ice cream maker’s instructions to freeze your blended mixture.
14.) Serve your finished product and store the leftovers in the freezer.
